I have some duck thawing in the fridge, after the weekend, I will be grinding it up with some chorizo pork sausage and making some meatballs. The mix will be around 50/50. What do you think?

I don't have duck very often, but I know turkey gets used occasionally.
my last batch of meatballs was duck and venison (deer). the batch before that was Alligator and bacon.
I used to do chicken parts, or a whole chicken or turkey
if everyone’s eating. Vegetarian or salmon has been my trend for while
but we’ve never cooked duck. I’ve only had it at a restaurant
and I don’t think it was done well, as it was a bit tough.
Then with meatballs... an interesting combination
When I do it, I use as much as I can. When I grind up the duck, I will be using organ meat, and skin, as well as the meat.

Rabbit was common in Britain, I know Texas has snake occasionally.
