Meatballs - JonesAlex1981 - 02-07-2020 I have some duck thawing in the fridge, after the weekend, I will be grinding it up with some chorizo pork sausage and making some meatballs. RE: Meatballs - DJJ - 02-08-2020 I used to do chicken parts, or a whole chicken or turkey if everyone’s eating. Vegetarian or salmon has been my trend for while but we’ve never cooked duck. I’ve only had it at a restaurant and I don’t think it was done well, as it was a bit tough. When I grind up the duck, I will be using organ meat, and skin, as well as the meat.
